Located on level six of Mercure Melbourne, Foundry Kitchen and Bar is a 30-seat bar and 130-seat restaurant with a 60-person outdoor terrace overlooking Flagstaff Gardens, the Melbourne skyline and Marvel Stadium.

In approaching the project, the interior designers sought to create a unique identity; something unlike what one might expect from a venue of this type.

“While the design acknowledges the building's industrial heritage as a former tinsmith factory, the primary focus was on creating an experience that feels distinctly Melbourne – contemporary, approachable, chic and a little edgy,” says Sunshine Laudiano, Senior Interior Designer, Sora Interiors.

“Through playful choices of materiality, bold colour selections and bespoke furnishings, the design establishes a strong sense of destination within the hotel itself.”

By maintaining a clear design vision and carefully coordinating every aspect of the guest journey, the team was able to create a series of distinct yet interconnected spaces that feel generous, welcoming, and engaging.

Asked about the techniques involved, says playful selections, layered detailing and carefully crafted furniture design were key.

“The interiors are reflective of Melbourne's distinctive hospitality culture, combining bold colours, rich textures and bespoke elements that activate the space both during the day and into the evening,” she adds.

For example, particular attention was paid to the custom dining table designs, furniture selections and finely resolved details. The aim was to ensure every element contributes to the guest experience.

“The design intentionally balances warmth with sophistication, creating an environment that feels contemporary, approachable and refined, while retaining a sense of character and edge,” says Laudiano.

Rather than creating a single uniform environment, the design encourages guests to experience different emotions as they move through the venue. Whether in the intimacy of the private dining room, the openness of the restaurant or the bold energy of the bar, each space offers a unique experience while remaining part of a cohesive whole.

The result, says Laudiano, is a hospitality destination with a sense of place and a distinctly Melbourne character.
